If you’ve ever been to the C&D shop in Soho, you might have seen our favourite flavour, The Velvet Volcano, which is essentially a Frankencake which we created a while back by putting all of our leftover bits and bobs in to one cupcake. THEN WE WENT EVEN FURTHER!! We turned it in to a Cookie Cup because the combo of Red Velvet, Oreo, Caramel and Chocolate, is to darn good not to have a version across all the different cake mediums! And lucky for you, Sally is here to show you how to make your very own!
Recipe –
For the Red Velvet Cookie Cup case…
170g light soft brown sugar
20g demerara sugar
115g soft unsalted butter
1 lg egg
1/4 tsp vanilla extract
1/4 tsp red food colour paste
235g plain flour
15g cocoa powder
1/4 bicarbonate of soda
1/2 tsp salt
For the Cheesecake Filling…
290g cream cheese
60 caster sugar
1 lg egg
1/4 tsp vanilla extract
For the Oreo Buttercream…
150g soft unsalted butter
330g icing sugar, sifted
1/4 tsp vanilla extract
2 tbsp crushed oreo crumbs
2-3 tbs milk
