How to Make Blueberry Pancake Cupcakes | Cupcake Jemma

Because, well, just look at them! They are so flippin’ cute and I can confirm that they are also delicious so they are pretty much brilliant on every day of the year! Recipe –
For the cupcakes –
125g self raising flour
125g caster sugar
135g soft unsalted butter
Zest of 1 lemon
2 lg eggs
1.5 tbsp lemon juice
1/4 tsp bicarbonate of soda

For the Blueberry compote –
300g blueberries (minus 12 good-looking blueberries)
3 tbsp caster sugar
1 tbsp lemon juice
2 tbsp water

For the pancakes –
110g plain flour
2 tsp caster sugar
just under 1.5 tsp of baking powder
Pinch of salt
150ml whole milk
1 lg egg
15g melted and cooled butter

For the icing –
75g soft unsalted butter
120g mascarpone (at room temp)
420g sifted icing sugar
