RECIPE –
For the Cookie Cup bit…
55g unsalted butter, soft
85g soft brown sugar
20g demerara sugar
1/2 a large egg
1/2 tsp vanilla extract
125g plain flour
1/4 tsp cinnamon
1/4 tsp salt
1/4 tsp bicarbonate of soda
50 finely chopped white choc chips

For the Cheesecakey bit…
145g cream cheese
1/2 a large egg
30g caster sugar
50g Biscoff spread

For the topping…
1/2 batch of my Swiss Meringue Buttercream with the vanilla replaced with 150g Biscoff spread, plus some melted Biscoff spread for dipping/dripping and a li’l piece of Biscoff biscuit!
