When you’ve forgotten you have bananas ion the fruit bowl and they turn brown and mushy, don’t despair! Save those guys and transform them from ugly slugs to delicious Banana Split Cupcakes! Too easy!
Recipe
For the banana cupcakes…
125g soft unsalted butter
140g self raising flour
100g caster sugar
15g dark soft brown sugar
1/2 tsp bicarbonate of soda
2 small bananas, super ripe!
2 lg eggs
1 tbs milk
For the swiss meringue buttercream…
2 lg egg whites
150g caster sugar
200g soft soft soft butter
1/2 tsp vanilla extract
To finish..
melted chocolate
sprinkles
cocktail cherries
