I’m not going to pretend I think it’s a bit weird when people say they don’t like cake, but those people still deserve to celebrate in the normal way…with a cake. So this cake is especially for them because it’s made out of cookie! No one doesn’t like cookies, right?
Recipe –
For the cookie layers…
85g soft unsalted butter
100g light soft brown sugar
50g caster sugar
1 lg egg
1/2 tsp vanilla extract
125g plain flour
1/4 tsp baking powder
1/2 tsp salt
175g chocolate chips
For the cookie dough…
120g soft unsalted butter
95g caster sugar
45g demerara sugr
80g plain flour
25g cocoa powder
1/2 tsp salt
75g white chocolate chips
1/4 tsp vanilla extract
10g yoghurt or buttermilk
