Recipe –
For the chocolate shortcrust pastry…
225g plain flour
20g cocoa powder
2 tbsp icing sugar, sifted
pinch of salt
150g very cold butter, unsalted
3 tbsp ice-cold water
For the Salted Caramel custard filling…
110g caster sugar
45ml water
400ml double cream
pinch of salt
1 egg + 3 egg yolks
For the topping
1-2 bananas
150g double cream
75g creme fraiche
dark chocolate for grating on top
