Snappy lemony cookies sandwiched together with cream, whipped lemon and white chocolate ganache, even if it isn’t Valentine’s Day, you should get on and make these!
Recipe –
For the cookies…
100g soft unsalted butter
100g caster sugar
1/2 lg egg
zext of 1 lemon
210g plain flour
For the filling…
100g double cream
150g white chocolate, melted
zest of a lemon
To decorate…
sugarpaste in various pastel shades
royal icing in slightly darker shades.
